Cooking, A Culinary Adventure – Guest Post and Recipe – Ilse Dumont and Yannick Tirbois

Ilse was a tour guide around Thailand and Indonesia. Yannick had come from working in Vietnam via Bangkok and was executive chef at a boutique resort. A common love of travelling, a passion for good food and an appetite for high standards have proven to be a good foundation. After working in the best hotels and resorts, we eventually opened our own semi-fine dining restaurant, The Mangrove, overlooking a mangrove swamp. We also helped others realise their own culinary dreams.
After twelve amazing years on Koh Samui, our spirit of adventure got the better of us and we decided to move on. We ended up in China via Singapore, Qatar and Abu Dhabi, spending a few years in each to soak up the varied cultures and making more friends. Meanwhile, we catered to a wide range of people, from friends and family to sheiks and celebrities, adding up to another eventful eight years.
Method:
•          Pass the mixture through a sieve, return to the stove, stir in the coconut milk and let it thicken to your liking. Season to taste and decorate with fresh coriander and parsley. Ingredients:

Fragrant Coconut – Mango Soup

Anyone who knows me well will know that I will never be a candidate for Masterchef. However I am a bit of a foody when it comes to nice restaurants and eating out (something I’ve missed during Covid) and I can only aspire to re-creating some of the amazing recipes I have in my collection of cookery books! When Ilse contacted me to ask about the possibility of my reviewing Cooking, A Culinary Adventure on the blog, I wondered if I might be a bit out of my depth given my lack of cooking skills and that there were probably better reviewers than me to produce meaningful reviews however I certainly wanted to know more and I thought it might be of interest to others. I am delighted to welcome Ilse and Yannick to tell more about their book and they have kindly provided a sample recipe below. The 167 page book is available from their own website in both print and ebook where they have links to various ebook retail sites and also from Amazon UK. I was however intrigued by the book and bought the ebook which for Kindle is a bargain price of £2.17 – the colour photos show up perfectly on the iPad – there is an index which you could skip through to the various sections and it all looks very well presented and well explained. If my culinary efforts are ever good enough I will come back with my pictures!

•          Remove the cinnamon and lemongrass before mixing the soup with a hand blender.
•          Add the mango, chilli and chicken broth and bring to the boil for 10 minutes.
1 small chopped onion
15 gr butter
1 crushed garlic clove
1 large, diced ripe sweet mango
400 ml chicken stock
½ red chilli
250 ml coconut milk
Fresh coriander or parsley
1 pc of lemongrass, bruised
1 cinnamon stick
Salt, pepper
